Yummy Thursday: Humble Chocolatte Cupcakes and Fun Features.

Welcome to Yummy Thursday!


Yummy Thursday is a celebration of food which is Simple, Yummy, Rough around the Edges, and Fun to make.

Please note: I am NO cooking expert. I play around in my kitchen and half the time something works and half the time it doesn't. The point is I appreciate food in a big way and just want to share that love with you. If you are looking for new Betty Crocker or Jamie Oliver style recipes... this is not your place to look. This is a place for just loving family friendly food.  
Today's experiment for me was a new chocolatte cake recipe.


 Spring is approaching and so chocolatte is on my mind.... yum!
Cakes in Germany are very 'bread-y' so I am constantly on the search for a nice springy, spongy cake base which uses ingredients that I can actually buy here!



A friend suggested this one and I set about tweaking it into my own creation. After making a few adaptions it came out quite brownie like in taste and very delicious! The recipe is:

Sponge Recipe:

2 cups Flour
2 1/2 tsp Baking Powder
1 tsp Salt
1 1/4 cups sugar
1/2 cup Cocoa Powder

2 Eggs
1 tsp Vanilla
1 1/4 cup Milk
1/2 cup Oil

Optional:
I added in some orange juice to try and give it an Orangey flavour. It didn't add flavour but since it did add fluid I thought I would mention it as it might have helped make them moister. I probably added about 1/3 cup Orange Juice, but you could probably substitute another liquid or leave it out since the original recipe didn't have it anyway.

Frosting:
Blend melted dark chocolatte, butter and icing sugar until a good consistancy. I didn't use a set amount for anything. I just threw it together.

Instructions:
1. Place all dry ingredients in bowl.
2. Add all wet ingredients and beat with electric mixer a few minutes until colour has lightened.
3. Pour into a 9x13 pan or cupcake cases (2/3 full).
4. Bake for about 30 minutes (in pan AND cupcake cases) on 350 degrees F (180 degrees C).
5. Cool and frost.
6. Eat and Enjoy... and try and share a few with the family! :-)

One of my favourite food finds this week is Pizza Pockets by MCKMama.
These look super simple but very delicious. A recipe to be enjoyed by adults and children alike. I can't wait to try these out. :-)

  2. All this looks so good... I am so glad that I found your blog. I am in Alabama way down south in the US. Where it is either hot and sweating or cold and freezing. Where we like fried chicken - hamburgers and sweet tea. I was so excited to see that you live in Germany. What part of Germany do you live? I am very fasinated with German culture. I have been working on my family geneaology. My husband's great grandfather came from Germany somtime in 1870 to the US. I am trying to find out when and how he came to the US and family. It is very hard to find out info. I do know that he was born Wesmer or Wismar around maybe 1842?. His name was John Boockholdt. ( it could have been Johann Bockholdt ). I hope that we can corresspond on a frequent basis. A new friend in Alabama
