Yummy Thursday: Detox Time!

Welcome to another Yummy Thursday!

(Please note: I am NO cooking expert. I play around in my kitchen and half the time something works and half the time it doesn't. The point is I appreciate food in a big way and just want to share that love with you. If you are looking for new Betty Crocker or Jamie Oliver style recipes... this is not your place to look. This is a place for just loving family friendly food.)

This week is a little different as I started a detox diet yesterday so thought I would share a recipe for a Detox Tuna Melt & Homemade Honey Balsamic Dressing! I made this up because I love tuna melts and wanted a version which was bread free and mayo free to enjoy on my detox over the next few weeks.

It is yummy and quick to make, plus very nutritious. I love to eat this with a healthy fresh salad and a homemade Honey Balsamic dressing.

Ingredients:

Rice Waffles/Crackers
Tuna
Corn
Goats or Sheep Cheese
Salad
Balsamic Vinegar
Honey
Olive Oil

To Make:

1. Mix the tuna and the corn. You can add a little Balsamic Vinegar to help bind the ingredients if you want.

2. Put a portion of tuna mix on to the Rice Waffles.

3. Cover with some Goat or Sheep Cheese.

4. Place under a hot grill just long enough for the cheese to melt.

5. To make the Dressing mix together Balsamic Vinegar, a little Olive Oil and Honey to taste. I don't know quantities... I always wing it.

6. Serve the Tuna Waffles with a side of Salad and drizzle with the dressing.

7. Enjoy!
